Ingredients

3mediumcarrots (trimmed)
2tablespoonolive oil
2teaspoonlemon juice
1⁄4teaspoonsalt
1pinchground black pepper

Instructions

Pare carrots; shred on coarsest surface of hand grater into medium bowl. Add remaining ingredients; toss until mixed. Allow to stand, covered, at room temperature until serving time.
